Marmalade & Bitters | Recipe

A scrumptiously delicious blood orange marmalade recipe incorporating Beara Orange Bitters, rosemary, cloves, water, sugar and a large cooking apple.

Ingredients:

  • 500g blood oranges
  • 1 large cooking apple
  • 2 sprigs rosemary
  • 3 cloves
  • 1.5L water
  • 650g sugar
  • 40ml Orange bitters

Method: 

  1. First, blend the orange and apple together, then poach them in the water together with the rosemary and the cloves for an hour. 
  2. Double strain the mixture.
  3. Add sugar to the remaining liquid and reduce down to 1 litre. 
  4. Remove from the heat
  5. Add the orange bitters, tasting as you go.
  6. Add to sterilised jars. 

Enjoy with bread and cheese, in a toastie, with roasted duck or stirred into mayonnaise for a dip.
