A scrumptiously delicious blood orange marmalade recipe incorporating Beara Orange Bitters, rosemary, cloves, water, sugar and a large cooking apple.
Ingredients:
- 500g blood oranges
- 1 large cooking apple
- 2 sprigs rosemary
- 3 cloves
- 1.5L water
- 650g sugar
- 40ml Orange bitters
Method:
- First, blend the orange and apple together, then poach them in the water together with the rosemary and the cloves for an hour.
- Double strain the mixture.
- Add sugar to the remaining liquid and reduce down to 1 litre.
- Remove from the heat
- Add the orange bitters, tasting as you go.
- Add to sterilised jars.
Enjoy with bread and cheese, in a toastie, with roasted duck or stirred into mayonnaise for a dip.
